Letters Food processing
The article `Making Food Processing viable' (Business Line, December 8) made for interesting and insightful reading. It was right in pointing out that the profit margins of small-scale food processing in rural areas were not much as value addition was lesser than the cost of the venture.
Such being the case, rural cooperatives run by trained women folk would yield positive results. The Central Food Technology Research Institute had recently taught a few NGOs value addition methods for locally available food products.
Likewise, the government should encourage small entrepreneurs to include value addition in their businesses and tap the locally available goldmine of raw materials. B. Aravinda Prasad Mysore
